How To Make Chicken Ghee Roast

Ingredients: Chicken – 1 kg (Cut into medium big pieces) Onion – 1 big (Finely chopped) Ginger garlic paste – 2 tbsp Curd / Yogurt – 4 tbsp Turmeric powder - ¾ tsp + ¼ tsp Coriander powder – 2 tsp Salt Ghee For garam masala Cinnamon – 1 piece Star anise - 2 Cardamom - 10 Cloves - 12 Fennel seeds – 1 tbsp Cumin seed – 1 tsp Kashmiri red chilly Dry red chilly Steps: Dry roast the whole spices (except Kashmiri red chilly and dry red chilly ) until hot to touch. Remove and set aside. Heat Kashmiri red chilly and dry red chilly also. Remove and powder the spices and the chillies finely without adding water. Marinate chicken with garam masala, curd, turmeric powder, coriander powder and salt. Add more curd, if required. Cover and let it rest for a minimum of 30 minutes. Heat 2 tbsp ghee in a pan. Add onion and ginger garlic paste. Lower the flame and add ¼ turmeric powder. Sauté till the raw smell goes away. Add chicken and mix well. Cover and cook on medium flame till the chicken releases moisture. Then cook on medium-high flame. Turn off the flame and enjoy the chicken ghee roast.
