Ingredients: Ripe banana – 2 Milk – 2 cup Jaggery – 110g Ghee Grated coconut – Half of a big one Sugar Salt – ¼ tsp Steps: Grind banana adding some milk. I added ¾ cup milk. Set aside. Heat a pan and add jaggery. (If the jaggery has any impurities, melt jaggery separately in ¼ cup water and strain.) Reduce the flame and add banana mixture and the remaining milk. Add ghee as per taste. I added 4 tbsp of unmelted ghee. Increase the flame. Keep stirring till the jaggery and ghee is melted and everything gets mixed well. Once it starts bubbling, cover and cook on medium-low flame. I am adding 2 more tbsp of unmelted ghee. Cover and cook till the banana is cooked. Stir often. It took around 20 minutes for me. Let it cook on low flame and proceed to roast coconut. In another pan, heat ghee and roast the coconut until lightly golden. Once it starts to turn golden, add sugar and mix well. Switch off and add this to the banana mixture. Mix well and cook on medium flame. Once coconut gets mixed well, increase the flame and cook stirring until the ghee gets separated. Add a pinch of salt. Switch off and enjoy warm.
