Easy Tomato Curry (Thakkali Curry) recipe

Ingredients: Tomato – 4 big (Chopped) Ginger – As per taste (Crushed) Garlic – As per taste (Crushed) Shallots - As per taste (Crushed) Turmeric powder - ½ tbsp Kashmiri red chilly powder - As per taste Garam masala - As per taste Mustard seeds - ½ tbsp Dry red chilly Curry leaves Salt Coconut oil Steps: Heat oil in a pan. Add mustard seeds and let it splutter. Add dry red chilly. Add ginger, garlic, shallots and curry leaves. Once the shallots turn golden, add turmeric powder and sauté on low flame till the raw smell goes away. Add red chilly powder and sauté till the raw smell goes away. Add tomato and salt. Cover and cook on medium flame till tomatoes are done. Stir often. Do not add water. Once the tomatoes are done, add garam masala. Switch off. Serve with hot rice or chapathy.
