Ingredients: Kumbalanga / Ash gourd - 500g Sugar - ½ cup Coconut Milk - 1½ cup Ghee - 3 tbsp + 2 tbsp Cashew nut - 2 handfuls Saffron - 3 pinches Steps: Remove the hard skin and grate ash gourd with a grater. Heat a hard bottomed pan. Add ash gourd to this and cook. Let the water content get evaporated and become dry. Add sugar and let it melt. Add thick coconut milk and saffron. Stir continuously. Once it starts boiling, add 3 tbsp ghee. Cook till the ghee separates. Stir continuously and cook till it becomes dry. Turn off the fire. Heat 2 tbsp ghee and fry cashew nuts till golden. Add this to the halwa. Mix well. Transfer to a plate. Enjoy the kumbalanga halwa.
