Ingredients: Raw rice / Pachari (Soaked for 2 hours) Salt Grated coconut Steps: Drain the rice. Add the drained rice to a mixie jar and pulse a couple of times to powder coarsely. Do not powder fine; there should be some granules (like rava) left. To steam the rice flour, fill less than one-fourth portion of the steamer with water. Transfer the steamer plate to the steamer. Since the holes on my steamer are quite big, I am using a cloth to hold the rice flour. Steam covered for 5 minutes. Switch off the flame and remove the rice flour. Let it cool down. After it cools down, the steamed rice flour can be stored in the fridge for up to 2 weeks. Add salt to water and mix well. Add water little by little to the flour and mix well. When you make a ball out of the coarse and moist mixture, it should hold its shape and should crumble back when pressed further. That's the right consistency. You can pulse this mixture in the mixie for a second to break the small lumps, if you prefer. Take the puttu maker/mould and add 3 tbsp grated coconut with a spoon and then add a few spoons of the prepared mixture followed by a layer of coconut. Repeat the same steps until the puttu maker is loosely full. Add 2 cups of water in a pressure cooker, cover the cooker and remove the whistle. Place the puttu maker on the vent pipe at the top of the cooker and steam it on high flame. When the steam starts coming out of the puttu maker, do not switch off immediately. Wait for another 3-4 minutes for the puttu to get cooked completely. Switch off the stove.   • You may add sliced shallots and cumin seeds also while preparing the puttu mixture.
  • To get the rice soaked quickly (in 30 - 45 minutes), soak it in lukewarm water (not boiling hot).
