Ingredients:
Chicken - 1 kg cleaned and drained (Preferably boneless)
Green chilly - 12 small or as desired
Whole black pepper - 1 tbsp
Puffed rice - 7 cups
Egg - 1 big
Salt
Oil
I am sharing a very special crispy fried chicken recipe today.
This would have been one of my secret recipes, if I had a restaurant.
This is something close to KFC’s crispy chicken.
The outer covering is very crispy and remains so even after cooling.
I have named it MK Chicken fry, MK being the short form of Mia Kitchen.

I am using 1 kg cleaned and drained chicken pieces with less bones. Boneless chicken is preferred for this recipe. If it is not available, use the pieces with less bones. Cut into small pieces.
12 small green chilly or as desired
1 tbsp whole black pepper or pepper powder
1 big egg or 1.5 small egg
Puffed rice
Add green chillies, whole black pepper and egg to a mixie jar and grind smooth.
In a large mixing bowl, add chicken, ground mixture and salt.
Mix well and let it rest for half an hour to two hours. You can also leave it in the refrigerator overnight.
Powder the puffed rice in mixie.
Add enough powdered puffed rice to give a thick coating to the pieces.
Mix well. Do not add water.
The chicken pieces should be coated like this.
Heat oil in a pan. I am using corn oil. It is better to avoid coconut oil for this recipe.
Add chicken once the oil is hot.
Cook each side until golden brown. Otherwise, the coating may come off while turning.
Note that the coating doesn’t come off while frying.
It took 15 minutes to get it done. Remove and add the next batch.
Before frying, make sure that each piece has the coating. Since some of them have lost the coating, I am adding some more powdered puffed rice.
This is ready now. Remove from heat.
Having a thick coating is very important for this recipe. I have used 7 cups puffed rice for 1kg chicken.
Use 1.5 small eggs / 1 big egg because egg is what binds the powdered puffed rice to the chicken. Adjust the quantity of egg according to the chicken.
While frying, fry til it becomes crispy.
