Ingredients: Tomato – 3 (2 chopped finely and 1 cut into big pieces) Coconut milk – Milk of ½ coconut) Onion – 1 big (Thinly sliced) Ginger – 1 small piece (Crushed) Garlic – 4 fat cloves (Crushed) Turmeric powder - ½ tbsp Coriander powder - 1 tbsp Red chilly powder – To taste Kashmiri red chilly powder – To taste Garam masala - ½ tsp Mustard seeds - ½ tsp Dried red Chillies - 4 Curry leaves Salt Coconut oil Steps: Heat oil in a pan. Add mustard seeds and let it splutter. Add dry red chilly and curry leaves. Add onion, ginger and garlic. When the onion becomes soft, lower the flame and add turmeric powder. Sauté till the raw smell goes away. Add coriander powder and sauté till the raw smell goes away. Add red chilly powder and Kashmiri red chilly powder and sauté till the raw smell goes away. Add tomato and salt. Cover and cook on medium flame till tomatoes are half cooked. Don't mash the tomatoes. Once tomatoes are half cooked, increase the flame and add coconut milk. Add garam masala and bring it to boil. Switch off. Enjoy the simple tomato curry with hot rice.
