Ingredients:
Rice – 1 cup (I used Basmati rice)
Tomato – 3 ripe (Chopped)
Onion – 1 (Finely chopped)
Kashmiri dry red chilly – To taste
Garlic - 8 fat cloves
Ginger – 1 big piece
Curry leaves
Turmeric powder - ½ tsp
Garam Masala - ½ tsp
Mustard seeds
Cashew nut
Dried red Chillies
Curry leaves
Salt
Oil
Steps:
Make a paste of Kashmiri red chilly, ginger and garlic adding little water. Set aside.
Heat oil in a pan.
Add onion and curry leaves.
When the onion turns soft, add turmeric powder and sauté till the raw smell goes away.
Add ground chilly paste and mix well.
Cook on low flame till the raw smell of ginger and garlic goes away.
Then add garam masala, tomato and salt.
Cook covered till the tomatoes are done.
Stir often.
Add 1¾ cups water to cook rice.
Increase the flame.
Adjust the quantity of salt.
Cover and bring it to boil.
Add washed and drained rice.
Cook covered on medium flame until the rice is cooked.
