Ingredients: (Makes 5) Ripe banana – 2 (Not very ripe) Grated coconut – 2-3 handfuls / ¼ of a coconut Cashewnut Raisins Ghee - 1 tbsp Cardamom Sugar Oil Steps: Add 2 glasses of water in a pressure cooker and pressure cook banana for 1 whistle on high flame and then for 5 minutes on medium flame. Do not add the banana directly. Always place them on a steamer plate. Heat ghee in a pan. Add cashew nuts and then raisins. Saute on low flame till it starts to turn golden. Add grated coconut and mix well. Add cardamom powder and fry till the coconut starts to change the colour. Switch off and add sugar. Mix well and keep aside. Mash the cooked bananas once it cools down. Mash it with hands or pulse in the mixe. Add a little ghee and mix well without any lumps. Never add sugar to the banana mix. Grease your palm. Pinch medium balls of banana and flatten them in your palm. Add a spoonful of coconut mix and shape it in the shape of unnakkaya sealing the edges. Roll it in your palms without any cracks. Heat oil in a pan and deep fry them. Once it starts to turn golden, flip and cook on medium flame. Once its done, turn up to high flame and remove the unnakkai from oil. Enjoy the unnakai.
